Inspired by the British celebrity chef Keith Floyd, Dan Lewinsky set out his goal to make good food for the people out there. Dan the Man Cooking was born in 2011.
Ilana Cooper joined Dan’s business in 2012, where they would incorporate the concept of zero waste.
The company has catered and collaborated with the likes of Tesla, Bank Australia, Wildwon, The Youth Food Movement, and The Climate Institute. They achieved B Corp certification in November 2017 and set themselves the challenge of being Australia’s first zero waste to landfill event caterer by 2018.
This year they started offering waste audits and mentorship to help other businesses in the events industry get to zero.
Given that the amount of food waste is substantial in the food industry, they are determined to prove that being zero-waste can be economically sustainable.
They would use all of a fruit or vegetable by tackling the ingredients and making them not discard any of it, making their every meal unique and different.
The food that is thrown out would be given to the local community gardens throughout the area, repurposing the food by composition.
Every week, the team in the office would figure out how to manage waste streams in order for the food thrown would not end up in the landfills.
They are said to be 70% towards their goal by the end of this year.
“If we can create a zero-waste catering model, we’ll be shouting it from the rooftops to ensure every catering company can do the same.”
