The origins of ice cream float date back to the 19th century. It was created by Robert Green in Philadelphia, a soda shop operator who ran out of cream and decided to use ice cream instead.

Dondurma or known as the Turkish ice cream is believed to originate from the city of Maraş and what really sets it apart from other types of ice cream is its resistance to melting and very dense chewy texture. This quality is produced by adding two thickening agents to a mixture of milk and basic sugar, namely Arab gum, also known as mastic resin, and salep which is a type of flour made from the roots of early purple orchids.

In fact, in the Kahramanmaraş region, the ice cream usually contains much more than usual salep, which is why it is sometimes called dondurma kesme from Turkish word kesmek, which means to cut – and that is why this variety of ice cream is usually eaten with a knife and fork.
