In fact, different regions in the Arab going to have different kinds of preparations for this Kabsah Rice. In Kuwait, Qatar, UAE, and also Bahrain, Kabsah is also known as MACHBUS.
3) Maklubah Rice
Jordan is the origin of this Maklubah Rice. It is indeed quite special because it contains fried vegetables and some side dishes. Called Maklubah Rice because it is placed reversed. In the bottom layer, there are side dishes which could either be chicken or lamb, then fried vegetables such as cauliflower, carrots, potatoes, and eggplant. Then, rice is added. This process is done alternately up to the top. When the rice is cooked, the pot will be inverted into the tray.
4) Bukhari Rice
This Bukhari Rice comes from Uzbekistan. The correct method to cook it would be to saute the rice using tomato puree with spices and lamb side dishes. On top of the rice, carrots are sliced lengthwise and sprinkled. It is usually eaten with Salatoh, Salatoh Harr, and gravy called ‘idam’ which looks like dalca but it tastes sour and sweet added with vegetables such as okra, eggplant, and potatoes cooked with tomato puree.
5) Briyani Rice
Originally from Iran, this Briyani Rice is definitely well known by many. Briyani is the term used to denote a dish in which rice is cooked separately from a concentrated sauce. The curry and rice are then blended and layered, resulting in a dish of contrasting flavors of unflavored rice and highly flavored sauces and meat or vegetables.
